Bang Bang Chicken Skewers

Ingredients

2 chicken breasts, cut into cubes


Marinade:

2 teaspoons avocado or olive oil

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon onion powder

1 teaspoon garlic powder


Bang Bang Sauce:

½ cup mayo

½ cup sweet chili sauce

1 tablespoon sriracha

1 tablespoon honey

1 teaspoon paprika

1 tablespoon avocado or olive oil

Directions

In a large bowl, mix the cubed chicken with the marinade ingredients until well-coated.

Preheat your Blackstone griddle to low heat.

Thread the marinated chicken onto wooden skewers.

In a separate bowl, mix all the ingredients for the Bang Bang Sauce and set aside.

Spread the oil evenly on the griddle and add the chicken skewers. Cook for 2-3 minutes on each side, rotating until the chicken reaches an internal temperature of 155°F.

Brush the Bang Bang Sauce onto the chicken skewers while they are still on the griddle. Continue cooking, rotating the skewers and adding more sauce to layer the flavors, until the chicken is fully cooked.

Remove the skewers from the griddle once the chicken is done.

Serve with additional Bang Bang Sauce for dipping. Enjoy!

Notes

These were good. Jill and Hudson liked them. Hudson is willing to go spicier. About 1/2 the sauce would be fine for the 3 of us with 18-20oz of chicken.
